Ingredients
2 bagels
Spread
4 tbsp green pesto (pesto genovese)
Topping
200g smoked chicken
6 cherry tomatoes
2 eggs
¼ bag of arugula
2 tbsp pine nuts
salt and pepper
Boil water and cook the eggs (8 minutes). Grill the pine nuts in a pan on low heat until golden brown.
Preheat the oven according to the instructions on the packaging. Cut the bagels in halves and place them on the center rack with the insides facing up. Bake the bagels for 1 to 2 minutes until they turn (light) golden brown.
Allow the bagels to cool while cutting the smoked chicken, cherry tomatoes and boiled eggs into slices. Spread the bagels with the green pesto. Top with the smoked chicken, cherry tomatoes, egg and arugula. Season with salt and pepper. Garnish with the pine nuts. Tasty!
